Today we prepare a tremendous shredded carrot salad with fresh vegetables, so you can have a day full of energy and a super nutritious meal.

Contrary to what you might think when we say “salad”, we will not use green leaves. On the contrary, we will make the base of this salad with grated carrots.

This delicious shredded carrot salad is ideal to enjoy on its own or serve as an accompaniment to main dishes. The mix of sweet and salty flavors is balanced with a touch of lemon for a burst of flavor. The preparation is quick and easy, making it an excellent choice for any occasion – prepare it and enjoy!

It is an excellent option for a summer lunch and super hearty, which I repeat, you do not need to accompany it with other food.

  • 1 corn
  • 1 beet
  • 100 gr of cherry tomatoes
  • 100 gr of pategras cheese
  • 2 eggs

Step by step recipe

  1. We start with a good base of grated carrots for our salad.
  2. We are going to add corn in grains, it can be canned or the healthiest and most natural option, boiled and shelled corn. Simply boil the corn in water for 5 minutes and it is ready. Then we cut the grains with a knife.
  3. We also add boiled and diced beets. First we peel the beets and cut them into cubes, then we boil them until they are cooked. The cooking time varies depending on the size you cut the beets into.
  4. Add cherry tomatoes or round tomatoes cut into pieces.
  5. Then add cubes of pategrás cheese or a variety of semi-hard cheese.

  7. Now we are going to season everything with a little salt, a good splash of olive oil, and if you want you can add lemon juice or salad dressing.
  8. Mix the ingredients well and we are ready to eat.

The end result is a very hearty salad with carrots, great to eat alone or to accompany a barbecue. Personally, I prefer this type of salad for lunch and with that I am full of energy for the rest of the day.
