Carrot Cake – Whole wheat carrot cake

We are going to prepare a very popular cake called Carrot Cake. I am going to prepare it with whole wheat flour and I am going to add chopped walnuts and raisins. Obviously if you don’t like raisins or nuts, you can leave them out.

This carrot cake recipe is very easy to make and very popular nowadays when people are looking for a healthy diet. You can prepare it at home using whole wheat flour and healthy ingredients.


  • 200 ml oil
  • 1 1/2 cup brown or mascabo sugar
  • 4 eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon powdered ginger
  • pinch of powdered cloves, nutmeg, cardamom
  • 2 cups whole wheat flour (you can also use rice flour)
  • 1 teaspoon of baking soda
  • 1 teaspoon baking powder
  • 500 g grated carrots
  • Nuts and raisins to taste

How to make Carrot Cake

Step by step recipe for carrot cake

We start this recipe by adding in a bowl 200 milliliters of oil with a cup and a half of brown sugar or mascarpone sugar. With an electric mixer we are going to integrate these two ingredients.

Add the eggs one at a time, break the egg aside just in case it is not good. Add it to the bowl, beat for a few seconds until it is integrated and repeat this process with the remaining three eggs.

Once we have incorporated the four eggs we are going to add the spices.

Here I have a teaspoon of cinnamon, half a teaspoon of ginger, a pinch of nutmeg, a pinch of clove powder, and a pinch of ground cardamom.

We incorporate the spices in the bowl and now we have to add two cups of whole wheat flour with a sieve to filter out any impurities. If you do not have whole wheat flour you can also use rice flour.

Along with the second cup of whole wheat flour I will add a teaspoon of baking powder and a teaspoon of baking soda. We integrate all that with the sieve.

We beat for a few minutes with a mixer until all the ingredients are well incorporated. It is not necessary to do it at high speed, we simply want the flour mixture to integrate well with the beaten eggs and sugar.

Once this is done, it is time to incorporate the grated carrot. I have half a kilo of grated carrot, you can use a little more or a little less, no problem. We add it to the bowl and incorporate it first with a spoon, then we can use the mixer so that it integrates well with the dough.

The final result has to be a totally integrated preparation, carrot with the cake batter.

It is now when we are going to add the chopped walnuts and whole raisins. We are going to incorporate these ingredients to the dough using a spatula and wrapping movements.

Once we already have them integrated we are going to prepare the mold where we are going to cook the carrot cake.

The first thing we have to do with the mold is to butter it and then add flour. In my case I am using a savarin style mold of size 30. You can use a mold of this style or the traditional flat round mold, there is no problem at all.

Once we have the mold buttered and floured we are going to pour the preparation making sure that it falls evenly. You can even give a few small taps to the mold so that the preparation is level and perfect.

We will cook the carrot cake in a preheated oven at a temperature of 180 degrees for about 50 minutes. This varies a little depending on your oven but the final test to make sure it is well cooked is to stick a knife or a toothpick in it and it should come out perfectly clean.

When the cake is ready we will unmold it and let it cool.
