Today I bring you a recipe for tagliatelle sautéed with eggplant and cherrys. An ideal option for those who love pasta, but want to incorporate vegetables into their diet.

Necessary ingredients

  • 1/2 Purple onion
  • 1/2 Eggplant
  • 8 Cherry tomatoes
  • White wine
  • Salt, oregano
  • Parsley
  • 120g of spinach tagliatelle per person
  • Cream cheese

Recipe for spinach tagliatelle sautéed with eggplant and cherries

  1. Cut half a red onion into strips, the same with a piece of eggplant. In strips or squares is fine.
  2. Take the cherry tomatoes and also cut them in half or smaller. If you can’t get cherry tomatoes, you can use the common round tomato.
  3. We also chop a handful of fresh parsley, very small.
  4. In a very hot pan cook the onion for a few minutes.
  5. Then add the tomato and the eggplant. Stir and integrate everything and add salt, oregano and a dash of white wine to enhance the flavors. Cover and let it cook over medium-low heat.
  6. In another pot with boiling water add three small nests of spinach noodles and let them cook.
  7. When the noodles are two minutes away from the cooking point, add them to the pan along with some of the cooking water.
  8. Stir well to integrate everything so that the pasta can absorb the flavor of the sautéed pasta.
  9. Add diced cream cheese and fresh parsley just before serving.
  10. Mix well and serve.

Tips for cooking pasta al dente

When cooking pasta al dente it is important to keep in mind that cooking times depend on the type of pasta you choose. In the case of using fresh pasta it is best to let it boil for approximately 3-4 minutes and then transfer it to the frying pan to complete its cooking. This will allow us to obtain a suitable consistency, without being hard or too soft. If we use dry pasta (the common one of all the life that comes in package) the times of cooking will be a little more prolonged and will be around 10 minutes. This applies regardless of whether the pasta is egg pasta, spinach pasta, bell bell pepper pasta, etc.

If you are not sure of the cooking time, it is best to taste the pasta as it is cooking to avoid overcooking.
