Today we are preparing a vegetarian omelet with spinach and carrots (not to be confused with a vegan omelet) that will blow your mind. It’s easy to prepare, filling, and it will make you look great if you have guests.

The tortilla recipe I share below is my favorite combination. But needless to say that you are free to change any ingredient for another one that is more to your liking or similar. For example, we can replace the spinach with chard and the preparation will be exactly the same.

Ingredients for the vegetarian omelet

  • 1/2 Onion
  • 1/2 sweet bell pepper
  • 1 bundle of spinach (or 1/2 of chard)
  • 3 eggs
  • Salt
  • Oregano
  • 1 carrot

How to make vegetarian omelet

Step by step recipe of spinach and carrot tortilla

  1. We take a pot, put a little oil and add diced onion and bell bell pepper to cook over medium-low heat. We add a little salt to make them sweat.
  2. In a bowl, break and beat 3 eggs. Add salt and oregano. They must be well beaten.
  3. When the red bell pepper and onion are well cooked, we add spinach cut into small pieces and add a little salt. Do not worry about the size of the spinach because when it starts to cook it gets quite small.
  4. Add the grated carrot and turn off the heat.
  5. Then, add all this mixture to the bowl with the beaten eggs. Don’t worry, the eggs will not cook with the residual heat.
  6. Now take a frying pan, put it on the heat and add a little bit of oil and cook all the contents of the bowl. We flatten it a little so that it has an even surface and we shape it into an omelet with a fork. Cover and let it cook over medium heat. When the floor is cooked we will turn it over.
  7. To flip the tortilla, remove the lid from the pan and use a plate as a lid. We grab the pan as in the video, holding the plate that acts as a lid, and with a quick movement we turn it over very carefully.
  8. Once turned over, we put the vegetarian tortilla back in the pan to cook the other side. Let it cook for 1 minute.
  9. Once cooked it is ready. Serve it on a plate and let’s eat!

To take into consideration

The spinach cooks very fast and shrinks a lot in size, so we have to be careful and watch the pot so as not to overcook it.

The carrot will be practically raw, which will give us more texture when eating the tortilla, which is a good thing. If we boil the carrot before, we will obtain a much softer flavor and it will not be appreciated so much in the final result.

We can vary the cooking time to obtain a more or less juicy omelet depending on our personal taste.
