  • 1 Onion
  • 1/2 Sweet bell pepper
  • 2 carrots
  • 2 potatoes
  • 1 piece of pumpkin

Preparation of vegan vegetable stew

  1. First of all, we are going to cut onion, bell bell pepper, potato, pumpkin and carrot into small squares. The pieces of potato, pumpkin and carrot should be of the same size so that they can be cooked evenly.
  2. We are going to cook them with a little oil in a clay pot (if you have one) or a common pot.
  3. We are also going to cut in half some cherry tomatoes or a common tomato in small squares and we are going to add them five minutes after we have added the potato, the pumpkin and the carrot.
  4. Add a little water to help cook everything and it’s time to season.
  5. I seasoned the vegan vegetable stew with a few bay leaves, sweet paprika to taste, oregano and a little cumin.
  6. Cover and wait until all the vegetables are cooked. The time may vary depending on the size in which you have cut them.
  7. When everything is cooked, turn off the heat and serve the preparation in a deep dish.
