How to make rice stew with meat and carrots
- We start by cutting half an onion into brunoise (cubes) and we are going to cook it in a pot with a little oil over medium heat.
- Next, we peel and cut a carrot in half and then in half again. Then we cut it crosswise to obtain small cubes.
- We are going to add the minced meat to the pot. Here I am using more or less 400 grams of meat. We mix everything together so that it integrates.
- Season with salt, oregano and meat seasoning. We integrate and deglaze with a little bit of white wine.
- Now we are going to add the diced carrot to the pot.
- Add half a cup of tomato puree.
- We also add half a cup of rice and mix well so that everything is integrated.
- Add 1 cup of vegetable broth to cook the rice.
- Cook over low heat and add more broth a little at a time if necessary.
- Once the rice is cooked, you are ready to serve the rice stew with meat and carrots.

First of all, the meat. Adding the meat to this recipe is very simple, since you can use either ground meat or shredded meat. For ground meat, it is recommended to use 400 grams, mixing it with the onion and carrot. If you want to use shredded meat, we recommend cutting it into pieces of approximately 1 cm. This technique gives a different touch to the recipe, adding texture and flavor.
Second the rice. We can use any type of rice for this stew. White rice cooks faster and is lighter in flavor, which makes it ideal for this recipe. Brown rice is also a good alternative as it is a healthier source of energy. Finally, black rice offers a good amount of antioxidants and minerals, as well as an intense flavor that blends perfectly with the other ingredients in the stew.
